Now that everyone has eaten, and the dishes are washed I’m going to share some of the recipes from our Easter meal.
1 large can of pork and beans
1/4 cup of molasses
A handful of brown sugar
1/2 pound of bacon, cut into small pieces and fry it
After cooking the bacon mix it in a small roaster with the beans, molasses, and brown sugar. Bake at 350 degrees for 1 hour.
East to make and delicious!
6 potatoes, boiled, peeled, and diced
3 stalks of celery, chopped
1/2 of a red onion, chopped
6 eggs, chopped
1 tablespoon yellow mustard
1 tablespoon white vinegar
1/2 teaspoon of black pepper
1 1/2 cups of mayonnaise
Mix the potatoes, celery, onion, and eggs in a large bowl. In a medium sized bowl, mix the mustard, vinegar, pepper, and mayonnaise with a whisk. Pour the sauce over the potato mixture. Chill for at least an hour then serve.
Cashew Cookie Nests
1/2 package of chow mein noodles
1 small can of cashews
1 12 oz bag of milk chocolate chips
1 12 oz bag of butterscotch chips
2 bags of Cadbury Mini Eggs
Melt the chocolate and butterscotch chips in a double boiler. Stir in the chow mein noodles and cashews. Mix until the noodles and cashews are coated with chocolate. Scoop tablespoon size blobs onto a cookie sheet, either lined with parchment paper or coated with nonstick cooking spray. Place three eggs each nests. Refrigerate until set.
These cookies are a staple at our house.
Creamy Jello Dessert
1 small box of gelatin, you can use any flavor, we prefer lime.
1 package of cream cheese, softened
1 cup of boiling water
1 8 oz package of Cool Whip
1 small can of crushed pineapple, drained really well.
1 cup of lemon-lime soda, if using orange, or strawberry gelatin, try using a coordinating soda.
Dissolve gelatin into the boiling water, mix in cream cheese, using a whisk. Add the pineapple, and soda. Fold in the Cool Whip and chill for 4 hours.
If you use orange gelatin, try mixing in mandarin oranges. For strawberry, try using some chopped fresh or frozen strawberries.
